Stick Excellent Shape How can I form my granola into bars?
I have this excellent granola recipe which I'm trying to shape into bar form. So far, as I'm drying it in the oven, I've tried to compress it into molds and cook it less while in molds hoping the extra moisture would help it stick together (just ended up chewy and crumbly), and both times the end result has been bars that crumble apart the moment you mess with them. The basics of the recipe are oats with honey and oil.
How can I get my granola into bars that won't crumble apart? Thanks for your help.
I agree with adding eggs. This is usually a nice natural supplement to hod the ingredients together. Another thing you might get is a gum, like guar gum, that binds the molecules of the ingredients together to prevent it from falling apart.
